The French are certainly famous for their cooking. In America, when you visit a French restaurant, chances are that almost every dish on the menu has achieved fame in the culinary world. Dining at a good French restaurant is a delight in just about anyone's book.

If you go to France, it's a whole different story. Unless you're very wealthy, you can't be dining at such landmark restaurants as La Tour d'Argent and Taillevent. However, either walking or using the excellent Metro system, you can discover many reasonably priced restaurants which cater to Parisians and offer famous French dishes not often found in American French restaurants.

Architecturally speaking, these restaurants and bistros are often housed in buildings dating back to at least the 1600s. Wrought iron detailing, hand painted ceilings, stone walls and charming tables with fresh flowers, ah yes. Certainly a nice atmosphere in which to get down with some famous French food for your evening repast!

There is nothing quite like Beef Bourguignon prepared by a French cook. This famous French food staple is truly a classic. The sauce is a fabulous experience on the palate. I conducted considerable research, with an eye to obtaining the secret of this delectable French dish. In addition to being a master of sauce making, the preparation of the mushrooms and the specific brandy used may be clues. Recreating these famous French foods is not as easy as one might suppose.

Pistou may not jump to mind as a famous French food, but it certainly is in France. It's a seasonal soup, served only in early fall, when the fresh ingredients it includes are at their peak. There is no such thing as pistou without basil, an essential ingredient. When you see Pistou advertised on the lunch menu board outside a bistro, you'd better get right to it. Arrive too late, and it's sure to be gone.

Here in America, when we get croissants, they're usually in a box in the freezer section of the supermarket. In Paris, this would be a scandal. Anywhere you go in The City of Lights, you're never further than two blocks from a bakery. The bakers begin their baking around 3am each day. Baked goods are produced twice daily. This is why the chocolate croissant got on my short list of famous French food items. Heavenly with a cup of coffee for breakfast.

Much as I love French cuisine, escargot (snails) will never pass my lips. Just a thing of mine. Nonetheless, escargot is one beloved and famous French food. Escargot does have an interesting history. During the French revolution, poor people had no choice if they wanted to eat. Reportedly, the garlic butter sauce was invented to drown out any objections from your palate.

The women usually gather together and cook huge amounts of food for the celebrations and festivities. Tamales are often made for Mexican celebrations because they take a lot of time to make. Tamales are often made several times a year in big batches. Steamed tamales are a great Mexican food for the holidays.

Mexican wedding cakes and Mexican wedding cookies are enjoyed at Mexican holidays and not just weddings. Rosca de Reyes is the name given to the festive bread made for January 6. The bread is shaped like a wreath and decorated with lemon, cherries, candied figs, and mango. A tiny baby Jesus doll figure is baked into the bread and whoever gets the figure in their slice must prepare the food for the next Mexican holiday, which is Candlemas on February 2.

Mexican Holiday Drinks

Mexicans do enjoy Mexican beer and tequila but that is certainly not all. Rompope is a drink a bit like eggnog flavored with rum, cinnamon, and almonds. This thick, frothy confection is often enjoyed on Mexican holidays.

Atole is another rich, thick drink, which you might enjoy on a Mexican holiday with any meal. It is sweetened with brown sugar, flavored with cinnamon, and topped with fruit slices.

Many people are sadly unaware of what authentic Mexican recipes entail, partly because of the popularity of Mexican fast food and partly because not many people outside of Mexico really grasp what this exciting cuisine is all about. You do not have to wait for a Mexican holiday to try making some delicious Mexican inspired dishes!

They also decorate the churches with colorful utensils and flowers, hold dance competitions, fireworks, parades and parties. You might see bullfighting, cockfighting, and football during village festivals.

No Mexican party is complete without a hanging piata and these paper mache people, animals, or fictional characters contain candy and toys. The kids take it in turns to hit the piata, while wearing blindfolds, and when it breaks and the goodies fall out, the kids share them.

On some Japanese restaurant menus, you can see oyakodon, a chicken and egg rice dish. Chicken, egg, green onions, and several other ingredients are simmered together with condiments including soy sauce and then served over rice in a large bowl. Oyakodon may taste slightly sweet due to the mirin. Mirin, which is used for cooking, is a rice wine with a very high sugar content. Eat chicken, beef, pork, or another Japanese dish that tastes sweet, but is not dessert, chances are good that the sweet taste comes from mirin.

While this image of parent and child together on the table in front of you may not resonate with most Westerners, the image seems popular in Japan. You can also find shake oyakodon, which is salmon parent and child, on some menus too. This is salmon and roe, which are served raw, over rice. You can also find cooked salmon served together with raw salmon roe over rice. Some sushi places serve pieces of sushi with salmon and salmon roe together too. They could be combined inside a gunkan, which is how sea urchin and salmon roe are generally served. Or this could be a regular piece of salmon on rice, adorned with a few eggs on top.

Many Japanese seem to derive great satisfaction from these combinations of food that can be eaten in many forms. Out for sushi a while ago, my friend Fred saw shirako on the menu. Not knowing what it was, he asked.

The sushi master said that tarako, was the eggs, and shirako was the male part. Fred, knowing that tarako was cod roe, immediately put two and two together, realizing that tarako was cod sperm. Later, he found the term cod milt, which sounded much better, on the Internet. Just as most Americans prefer calamari to octopus, Fred imagined that most Americans would prefer cod milt to cod sperm, or at least be less revolted. Fred thought about this a while, and then ordered one.He can't even recall the cod sperm taste, just a taste that was neither delicious nor revolting, simply another variety of sushi, perhaps a little slimy.

What Fred does remember is that the sushi master seemed quite pleased that both the soft roe, which is sperm or testes depending on the marine species, from the male cod and the hard roe from the female cod could be eaten. Fred finds it quite interesting that shirako is looked down on in America as cod sperm while the soft roe from sea urchin is quite popular. Sea urchin has a strong taste and for some people, is an acquired taste. Shirako, however, doesn't have a strong taste. Shirako is available in Japan only in the winter months. The Szechuan style of cuisine arose from a culturally distinct area in the central western of part of China, a province known as Sichuan. This area of China came into its own culturally towards the end of the Shang Dynasty, during the 15th century. However, it was also the climate of the area that helped to shape the culinary traditions that were to arise from Sichuan province and make their way into the realm of international cuisine.

The province from which the cuisine that the world knows as Szechuan evolved is often hot and humid, and this contributed to this necessity of preparing foods in ways that differ significantly from other regions of China. Szechuan cuisine is primarily known for its hot and spicy dishes, though naturally there is more to Szechuan food than spice and sauces rich and strong in flavor.

A general overview of culinary history and trends reveals that, for the most part, areas that tended to spice heavily were areas in which the fresh food supply was not as reliable as in places that traditionally used a lighter hand in their use of spices. The climate of Sichuan is conducive to faster food spoilage. This, particularly in the past, made necessary food preservation techniques that themselves left behind a strong flavor, such as salting, pickling, drying, and smoking. Thus, spices served to mask the flavors of less than fresh foods and those that have been preserved by methods that affect their natural flavors. In addition to masking certain flavors, the use of hot spices, such as chili peppers, tends to be more common to hot climates, as the sweat that they can produce is thought to cool the body.

Much of the spicing of regional Chinese cooking is based upon bringing together five fundamental taste sensations - sweet, sour, pungent, salty and bitter. The balance of these particular elements in any one dish or regional cuisine can vary, according to need and desire, especially as influenced by climate, culture and food availability.

In Szechuan cuisine, there are a variety of ingredients and spices used to create these basic taste sensations. These include a variety of chili peppers, peppercorns over various types, Sichuan peppers, which are in reality a type of fruit, not pepper, and produce a numbing effect in addition to their warm flavor. Sichuan peppers, also called flower pepper and mountain pepper, are a traditional part of the Chinese five spice powder, or at least of those that are modeled upon the most authentic versions of the spice combinations common to regional Chinese cooking.

Other ingredients used commonly in Szechuan cuisine to create the five fundamental taste sensations include different types of sugars, such as beet root sugar and cane sugar, as well as local fruits for sweetness. The sour comes from pickled vegetables and different varieties of vinegar. A special bitter melon is added to many dishes to offer the touch of bitterness that complements other flavors. Other spices and flavors include dried orange peel, garlic, ginger, sesame oil and bean paste. Salt is important to Szechuan cuisine, and the area produces uniquely flavored salts that help to distinguish authentic Szechuan cuisine from the other regional cuisines from China.

You cannot predict things like rain and thunderstorms ahead of time, but you can make sure that you hold you barbeque during the time of year that will be pleasant to your guests. A barbeque in cold weather may hold more negative memories of trying to keep warm rather then good memories of family and friends.

If you have the money to buy enough food to at least feed your family then you have enough money to make whatever you feed them enjoyable, even if it's a vegetable dish.

Yes, with the right spices or herbs, and recipes, the children in your family will come to love vegetables. My family has several favorite veggie dishes, that our kids like so much they want seconds. And the main secret to them are the different spices we use.

Just as they do with vegetables; spices, herbs, and sweeteners are the secrets to making all foods delicious.

These three food miracle workers can be relatively inexpensive if you know where to look.

In most health food stores (and in select supermarkets in growing numbers) there is a wondrous invention called a BULK section.

I'm sure everyone knows what this is, but in case you don't I'll explain:

It's a section of a store that has all types of different flours, beans, cereals, spices, herbs, and much more.

Each of which are in separate containers or large plastic buckets with a scoop, that allows you to buy as much or as little as you want of what ever spices or other food they carry.

The store provides you with bags and twist ties, for your convenience.

Spices are an excellent example of how cheap it can be to shop in bulk. Most small jars of spices or herbs like basil, oregano, thyme, etc... cost any where from two dollars a bottle to four ninety nine (which is technically five dollars a bottle).

In a bulk section you can buy these same spices, getting twice as much (or more) for less than a dollar or a little over.

Talk about savings! Herbs and all kinds of spices are much cheaper bought this way than paying the extravagant prices you are charged for a pre packaged bottle of the same spices.

Flour and other cooking and baking necessities are also much cheaper if bought in a bulk section

Note: buying in a bulk section does not mean you have to buy a lot of everything! You could buy only one cup of flour in a bulk section if you wanted to or one tablespoon of any spices or herbs.

Ideally you should shop around at whatever different stores in your area have bulk sections, and compare prices to make sure you're getting the cheapest price.

Bring a calculator to the store and be prepared to do a little brain work to figure it out.

Another money saving trick is to substitute ground turkey for ground beef in recipes. Here you might prefer the taste of beef but in terms of the money you save it will certainly taste heavenly to your budget.

You can spice up bland omelets, scrambled eggs, soups, meat patties and more with the correct spices, and herbs.

Here is a recipe for deliciously spicy eggs, that won't dent your wallet:

For scrambled eggs try using 1/4 teaspoon thyme and pepper, and 1/2 teaspoon salt and oregano, and 3 eggs. Mix the eggs, spices, and herbs together in a bowl.

Heat a frying pan on medium heat until very hot, then add your oil (preferably olive oil or coconut oil) to the pan. Wait a few seconds until the oil starts to smoke, then pour the eggs from your bowl into the pan.

Have a fork in your hand ready to scramble the eggs with, because they'll start cooking instantly. Scramble the eggs for 30 seconds to a minute. Then use a spatula to scoop them out onto a plate.

As a numbers person, I'm pretty careful about how we spend our money. The one item in our budget that has always bothered me, though, is the grocery bill. We don't eat out much, so our grocery bill will be higher than other families, but for a small family, we spend way too much on groceries.

So when a friend taught me how to do meal planning, I knew this would be the answer to our outrageous grocery bill.

The greatest benefit to meal planning for my family is the money we save at the grocery store. Before I started meal planning, I would go to the store just about every day, and I would buy things that we either didn't need or that we never got around to eating. What a waste of money! Now that I plan our meals a week ahead of time, I go to the store less often, and I only buy what we need. It's amazing how doing something as simple as planning what we'll eat for the next week has saved us so much money in our food budget.

Meal planning is also a huge time saver. Think about it, how much time do you spend surfing the Internet for recipes and ideas for dinner? And not to mention how much time you spent at the grocery store wandering the aisles looking for dinner ideas. By doing meal planning, you'll already know what's for dinner each night (so no surfing the web or pouring through recipe books), and you'll make less trips to the grocery store because you'll already have everything you need for the week. If you go to the grocery store several times a week (like I used to), then meal planning could save you several hours a week!

A benefit of meal planning that you might not have thought of is that it helps you eat healthier. I don't know about you, but when I'm scrambling for dinner ideas, I tend to either throw something together using processed foods (cheese, box dinners, etc.), or I go out to eat. Either way, you tend to eat out more often and eat fattier foods when you don't plan your meals ahead of time. Meal planning can greatly improve your family's diet because when you cook at home you're more likely to use fresh, healthy ingredients, and when you plan your meals ahead of time, you're less likely to run through the drive through on the way home.

Now you see the benefits of meal planning. So how do you actually do meal planning? Here are some steps to help you make meal planning fun and easy:

1. Write down all of your family's favorite dishes. Keep a recipe book or binder handy so you always have dinner ideas.

2. Next, grab your favorite grocery store's sale ads for the week. Your goal is to come up with dinner ideas from the items that are on sale that week. You also might want to stock up on items that your family uses frequently when they go on sale.

3. Look through your pantry and refrigerator for food that you already have on hand. If you have any perishable items that need to be eaten soon, or if you have any old food in the pantry that's going to expire soon, then you'll want to plan your meals using these items.

4. Write out the meals you plan on cooking for the week (a weekly meal planner worksheet works great for this), and fill out your grocery list for the items you don't have on hand.

5. The last step is to post your weekly menu for the whole family to see, and then to cook your meals of course! Once you get the hang of meal planning, you'll see how much time and money you save, and your week will go much more smoothly now that you don't have to panic about what to cook for dinner each day.

Over the years I have done a few stories on the New York Catskill Mountains and I have done a few stories about places I have enjoyed eating at. Well recently while I was once again up in the Catskill Mountains, I went to a 50's Thyme Diner called "Johnny B Good" located at 5806 RT 23 in the NY Town of Acra. [I:15:J]

I was upstate in the Catskills Mountains at my Sister's for the Holidays. My Mother, My Niece and I where out checking out the area. After looking around a bunch of really cool antique stores in the Town of Catskill itself We where all getting Hungry.

Now as I have said before I love to eat! Now my Sister being my Sister well she too loves to eat and I had heard her and my Brother in Law mention Johnny B Good as a great place to eat more then once. So it was the place I wanted to check out!

As we arrived right off the bat I could see from the outside it really looked like an Old style 50's Diner.Now It seems these days everyone has a catch or a thyme to get you threw the door. So as good as the place looked from the outside, I was going to wait before I gave it a thumbs up. As we entered I could see they hadn't missed much with the 50's (and a little bit of the 60's) thyme on the inside. We sat down and started to look threw our menu's and order some food. As I looked though the Lunch and Dinner section of my menu I saw all the meals had names that helped to take you back. There where meals called the Peggy Sue Special , Jimmy Durrante Rueben , La Bamba Burger , Tarzan of the Jungle Salads and the Wimpy Burger (For Wimps) to name just a few. Now being a Biker I felt an obligation to order the Marlon Brando Mushroom Cheeseburger with Onion Rings. [I:13:J]

While waiting for my food I started checking out the Breakfast Menu and found a few more Classic meal names like the Rita Hayworth Cheese Omelet , The Cisco Kid Chili Cheese Omelet, The Jolly Green Giant Veggie Omelet and I am going to have to go back to try some of their Hot Rod Pancakes!

I then got up and started to look around at all the great 50's Memorabilia Johnny B Good's had to offer hanging on the walls. There where of Course pictures of the King "Elvis", some old Movie poster's , Pictures of many of your favorite 50's stars, some Classic 45s, some of those old plastic circle things you used to have to put inside the 45's so you could play them on your turn table, (did those things have a name?) and even some old personal Pictures brought in by friends of the owner Bobbi.

I got to meet and speak with Bobbi the owner. I found her to be extremely Friendly. After just a few moments talking to her I could tell she really loves the place. There was no hiding the fact that she puts her heart and Soul into giving Johnny B Good that Nostalgic feel of a 50's hang out. It really is a place where everyone feels at home enjoying a meal with Friends.Bobbi told me during the Summer months Johnny B Good holds many Cruise Nights and many people from far and wide show up in Classic Cars and on Classic Motorcycles. They all hang out showing off their rides talking and eating! On a hot Summer Night both the young and old love to stop by and enjoy an Old fashion Style Ice Cream Soda or Root Beer Float .

Now as I have said before how a Restaurant makes you feel just being there does count for something, but when it comes right down to it the Bottom line is taste and there Bobbi and Johnny B Good's have the most important blast from the past down and this is good old fashion Quality and Taste.

I recommend you stop by Johnny B Good when you are out Cruising up in the Catskill Mountains! Just make sure to remember while in the Catskill Mountains taking this trip back in time at Johnny B Good's "Nobody puts Baby in a corner"!!!

4. The next step is to write down the meals you will cook this week as well as completing your grocery list. I use a weekly meal planner worksheet that lists breakfast, lunch, snacks and dinner to write down my meals for the week. You might also want to use a standard grocery list with items that your family buys on a regular basis.

5. Almost done... the last thing you need to do is to post your menu for everyone to see, and then cook your meals. By posting the menu on the fridge or in the kitchen everyone will know what to expect for the week, and you might even get some unexpected help from your kids or spouse!

The History of Washington BBQ Well, first of all, BBQ did not originate in Washington, as you can probably guess. After all, man has been cooking his meat over an open fire ever since the caveman days. However, the cavemen were not loading on the A-1 or Teriyaki either-so where did the BBQ traditions that we are familiar (i.e. backyard, sauce, etc.) with begin?

The Origin of BBQ: Where did it begin and what about Washington BBQ? The theories are many and varied when it comes to the origin of BBQ. Some of the theories say that barbecue originated in the west, some say that it was in the southern United States, and some even claim that it originated in Europe. My favorite version1 of the origin of BBQ-and one of the more believable ones--is the western cowboy version. However, before we 'dig in' to the history (or the legend) we should probably define what real and true BBQ is:

BBQ is the process of slowly cooking meat over wood or coal. The wood or coal cannot be too hot (about 200 degrees is perfect) and gas does not count! Those who use gas grills today will have to face the facts and realize that a gas grill....grills.....it does not barbeque, although there are those who insist that it is really the sauce that classifies meat as barbecued meat.

Whatever definition you prefer to accept, here is the Western cowboy origin of BBQ:

The Origin of BBQ: Washington BBQ didn't start in Washington In the late 1800's there were many cattle drives that took place. Those who drove the cattle were cowboys and those who were in charge of the cowboys were the cattle barons. The cattle barons, like so many businessmen, scrimped when it came to paying (or in this case) feeding their employees. The cattle barons would supply the cowboys with the tough meat portions. These tough meat portions were referred to as brisket and were not exactly appetizing. The cowboys found however that if the meat was left to cook very slowly over wood or coal that in 5-7 hours the meat would make a delicious meal. This however, leaves us with the question of where the tradition of sauce came from.

Washington BBQ with Sauce....Did it Originate in the South? As mentioned above, many sources indicate that the tradition of barbecued meat marinated in various sauces originated in the southern United States before the civil war. Pigs were abundant at the time and were one of the staples of the south. Traditional BBQ made it possible to use every part of a pig and with sauces make it taste like a delicacy. Barbecue became an important part of religious, social and political functions. Barbecues also seem to be the kind of meal that both the rich and the poor alike can appreciate.

Washington BBQ Restaurants Today Today those who live in Washington and others from around the nation thoroughly enjoy a good old fashioned backyard barbecue. Washington BBQ restaurants have also become a regular part of Washington fine dining and entertainment. Hungry? Instead of visiting your friendly grocer, why not try your garden? Experts say more than 100 flower petals are edible and can satisfy your appetite.

This quirky recommendation comes from the people of Which? gardening magazine that recently tested 37 varieties of plants. Of that number, 11 emerged as the winner in terms of taste.

"If you are bored with simple salads, shop-bought herbal teas and the same old jam, look no further than your garden for inspiration. Many of the flowers we grow can be eaten and will lend a welcome splash of color or new flavor to your food," said a spokesperson for the magazine.

"Flowers have many edible uses. They make an interesting garnish, can be dried to flavor tea, crystallized to decorate cakes, infused in jars of vinegar, added to fresh salads, made into sauces for meat and more," he added.

Although its flowers are often blue, borage also produces purple flowers that have a slightly sweet and cucumber-like taste. These are often used in salads. Better yet, freeze them in ice cubes and use them to sweeten Pimm's, a popular alcoholic beverage in Britain.

"The flower, which contains the non-toxic pyrrolizidine alkaloid thesinine, has a sweet honey-like taste and is one of the few truly blue-colored edible things. It is often used to decorate dessert," according to the editors of Wikipedia.

"Vegetable use of borage is common in Germany and the Spanish regions of Aragn and Navarra. The flowers can likewise sweeten beer, fruits and jams.

"The whole herb possesses a pleasant taste and flavor, the green parts having a similar aromatic character to the flowers, leading to the use of the plant as a strewing herb, strewn on floors to give the rooms a pleasant aroma, and its use to flavor wine, beer and many vinegars. The flowers can be added to stewed fruit and jams, giving them a subtle almond flavor," said Wikipedia.

"Which? stressed that using ornamental flowers as a food represents a return to a tradition that dates back centuries. Roses and lavender have been popular additions to sweets for hundreds of years," reported Sean Poulter of the Daily Mail.

Most of the shrimp we eat in the United States speak a foreign language. Like most folks, I'd never really given a lot of thought to where the shrimp I eat come from. During my last trip to my favorite fishing grounds, Apalachicola Bay and St. George Island, Florida, I learned quite a lot about shrimp! Before this I was just happy to be able to eat all the shrimp I wanted and not care where they had spent the night before!

My family and I were preparing a huge pot of shrimp that we'd bought from the back of a pickup truck on the side of the road; next to the long bridge from St. George Island to East Point on the mainland. We were using a couple of recipes that we had just gotten from the fellow who had sold us our shrimp.

Our fish salesman's name was Ernest, the captain of his own shrimp boat, the "Mary Nelle". He'd lived in East Point, Florida for most of his life; shrimping for the last 12 years. He sells most of what he catches to local seafood distributors and picks up extra spending money selling fresh shrimp out of his pick-up truck. He is also a fountain of knowledge about the shrimping industry, most of which is not good if you're an American shrimp fishermen!

Bragging on his product, I mentioned that the last time I was on the island the shrimp I bought from him then was delicious. He replied by saying that the shrimp that lived in the waters off Apalachicola and St. George Island were the best tasting you could buy anywhere. Probably Texas and Louisiana shrimp fishermen would contradict that claim.

He then told me that 85 % of all shrimp consumed in American came from foreign countries such as China, Taiwan and Viet Nam. By some estimates it's more like 90 %.
I don't know about you, but I want my shrimp tasting like the last time I dipped into the Gulf of Mexico! I now know that some of the shrimp I've eaten in the past that tasted like boiled shoe laces were actually foreign shrimp. Besides that, about half of that is farmed raised, never having to fight for its existence in the ocean surrounded by ferocious predators. I think that's what gives the shrimp its unique taste; fear! You don't get that same taste with farm raised shrimp.

The reason for this huge importation of shrimp of course is money. Nations all over the world supply us with shrimp, most at a lower cost than our own domestic fishermen can provide. Fishermen here in the United States though, haven't taken this matter lightly. With slogans such as "Wild American Shrimp!" and "Do You Know Where Your Shrimp Is From?" are educating consumers in America to what good tasting shrimp is all about!

Ernest, the shrimper, admitted that even after all the years on the water, he stills loves the taste of shrimp. He was delighted to give us a couple of his recipes for shrimp. Here's how a real shrimper likes his shrimp!

ERNEST'S SHRIMP SCAMPI:

Half pound butter
2 pounds large shrimp, peeled and deveined
5 mediums cloves garlic, crushed and minced
4 tablespoons chopped parsley
3 tablespoons lemon juice
2 tablespoons Tabasco sauce

PREPARATION:

In a large skillet, heat butter over medium heat until butter stops foaming, usually 30 to 40 seconds. Add the shrimp, garlic, Tabasco sauce, lemon juice and parsley. Cook until shrimp are just turning pink, 4 to 5 minutes, turning often. Serve immediately.

For your own culinary treat, try to get American shrimp whenever possible. They taste better and as a bonus, they speak our language.
